🤩 We pulled the watermelons, although there were a few left on the vine because Black Spot was taking over 🍉😵 And sometimes, you just gotta day bye when it’s time 👋 Some of our peppers were also meh and not producing as much as others. So we basically pulled everything that was not thriving and replanted with Fall Veggies. If there was one thing we should prioritise it’s our health... One way to improve your chances of making it through cold and flu season alive is to make sure you have great balance at your meals. Everyone lovesss vitamin C this time of year but spoiler alert- it wont actually stop you from getting a cold. It may not stop you from getting a cold but Vitamin C does have the potential to shorten the duration of illness. . Good news, it is SUPER easy to get vitamin C in food. Most people think citrus like oranges and orange juice but 1 cup of broccoli actually has ~80 mg of vitamin C which is >100% of the Recommended Dietary Allowance (RDA) of vitamin C for an adult. The sweet potatoes you see here also offer 40 mg of vitamin C so this plate alone is close to 200% of the RDA for adults. . This doesn't mean crush your veggies at breakfast and forget about it later (or more commonly veggies at dinner and none for the rest of the day) because the research shows the dose needed to decrease the duration of colds is anywhere from 250 mg to 2000 mg daily. . So how do you get there? At least 1 cup of veggies at ALL meals, including breakfast and 2 pieces of fruit daily should get you well above the recommended 60 mg per day. How do you add veggies at breakfast? Try just sauteeing whatever veggies you have around and topping with fried eggs, omelettes, savory oats, egg bake or frittata cups with veggies, carrot and zucchini pancakes, veggie filled muffins, or just straight up munch on some sliced veggies on your way to work. . Dinner Tonight: Herb and Butter Salmon with this AMAZING vegetable hash my husband created. Finely chop approx: 1/2 a red pepper 1/2 a medium size onion 1 cup mushrooms 5 strips bacon 15 Brussel sprouts Cook the bacon, and leave some of the bacon fat in the pan. Fry the rest of the veggies in the bacon grease and then add bacon back in. Yum!
