#FOODFRIDAY had re-emerged. I’m not a big soup girl, but there’s something comforting about a big bowl of butternut squash soup on a crisp fall day. Butternut squash is delicious and very available this time of year, and it’s a great source of vitamin A, potassium, and fibre. I was okay with this particular recipe because I decided to top it with bacon, and it’s a well known fact that bacon has the ability to make just about anything good. Also, the rosemary and sage will make your house smell like Christmas. Yusssss. Try this out the next chilly day you’re craving something warm, tasty, and simple! 🎃 BUTTERNUT SQUASH SOUP (serves 4) 4 strips good bacon (or pancetta) 8 fresh sage leaves 1 red onion 1 carrot 1 stalk celery 2 cloves garlic 1/2 fresh red chilli 1 sprig fresh rosemary 1 kg butternut squash, deseeded and roughly chopped (you don’t have to peel it) 1-2 L chicken stock 🎃 1. Peel and finely chop onion, carrot, celery, garlic, and rosemary. Deseed and finely chop chilli. 2. Chop up bacon into small bits and fry until crispy. Remove to paper towel. Fry sage in bacon fat for 30s (or until crisp), then remove to towel as well. 3. Add onion, carrot, celery, garlic, chilli, rosemary, and salt and pepper. Cook until soft (around 5-10 mins) 4. Add squash and stock to the pot. Bring to a boil and simmer for 30 mins, or until squash is soft 5. When squash is soft, blend everything in a food processor or blender. Season with S&P as needed 6. Serve in bowls with bacon and sage leaves to garnish

LEG DAY for this momma is done! . . Upped my sumo squats to 40 lb dumbbell. Going up again next time to the 45 as those are the easiest for me 🙌🏼 . . Upped my last set of squats to 25 lb weights and got through it with good form so I’ll have to try next time to do the last 2 sets with those 👌🏼 time to get this booty in GEAR! . . Got through the triple bear hops without stopping all 3 rounds so there’s proof that you’ll progress if you don’t give up! . . I literally sweat my face off today with this one. CANNOT believe it’s week 6 next week for me of round 2! Wooohooo 💃🏼 only FOUR days a week too.. pshhhhh... 👏🏼👏🏼👏🏼 Anyone can commit to that.
