Been a busy day recipe testing new holiday dishes, so throwing it back to one of my lunches a few weeks ago 💫 I used to never know what to eat for lunch until I finally learned to keep the fridge stocked with basics & extra roasted veggies that I can throw together in minutes. Now lunch is my favorite meal ✌️ .. . The details on this one 👉 Started with a big bowl of fresh greens, added roasted eggplant, roasted chickpeas, fresh tomatoes, a scoop of hummus, feta and olives, then topped it off with fresh herbs, olive oil & balsamic. 😋.. . Last of my meal prepped food for the week. It always makes me a little sad to finish everything I made 😢 which is silly since I’ll do it all again next week! 😂 • I’m heading down to Lexington, Virginia this weekend though to compete in the USDF Dressage Regionals! So no meal prep on Sunday and I’ll be eating out of the freezer and utilizing some healthy options I can buy next week. • Weekends like this always make me a tad nervous though 🙁 where will I eat? will there be healthy things for me to eat? Will I be able to stick to my food plan? If I can’t stick to it, will it ruin everything?? I get nervous about being away because I know it will be hard to stick to my numbers, especially since there aren’t many restaurant options around and horse show food is pretty lame 😕 • BUT at the very least, I will be prepared with breakfast and snack options! 😏 I’m bringing with me a whole stash of @nocow

Day 11 clean eating! Going 💪
I remember how much I used to HATE shopping..... . I remember a specific shopping trip like it was yesterday. I needed some jeans so I grabbed the size I thought I was n they didn’t fit. I ended up having to go up to a size 14. I put them on, showed them to my mom, and pretended to smile n agree that I liked them. But deep inside I was heartbroken. I was fighting back tears. How did I let myself go this far?! All the negative self talk started again! You are fat. You are ugly. Ugh how I talked to myself was so sad 😞 But instead of doing something about it I would comfort myself with food and alcohol. Then I would tell myself “Jud loves me just the way I am. He doesn’t care if I’m a size 14”. . And so it continued like this until my freshman year of college. I had to take an aerobics class n a weight lifting class and I began to develop a love for fitness. I started working out in the activity center with my classmates n slowly but surely I started to feel good in my own body. I started to have confidence again. So instead of gaining the freshman 15 I lost it. . But let me tell you friends....this hasn’t been an easy process. I’ve had my ups n my downs n plateaus along the way. Add kids and pregnancy weight gain n I’ve struggled with that. But it’s all part of my story n part of my journey 💕 . Today as I was shopping I was remind of how I used to feel. But today was different. Today I was able to buy size small shirts n rock my size 4 jeans. Damn this made me feel proud! I’ve worked so hard n feel so amazing n this was like the icing on the cake! . I’m not saying you need to be a size small to feel amazing, oh girl I’m not saying that at all! But you need to find your happiness. You need to fight those inner demons n come out on top! You need to know you are worth fighting for ❤️ . My weight held me back from so much!! And I’m happy to say when I lost the weight I lost all the baggage with it!! . And that my friends is why I do what I do!I want other ladies to feel as amazing as I do! . I want YOU to walk in the fitting room with confidence! . I want YOU to hold your head up high! . I want YOU to freaking LOVE your body ❤️

LET’S TALK : WEEKENDS 👀 . . Hands up if you find it easy to stick to your healthy eating & exercise routine during the week .. and then the weekend arrives 🙋🏼♀️. . . For most people it’s pretty easy to stick with healthy eating and a structured workout routine during the workweek, but for whatever reason the weekends throw us for a loop. . . TIPS TO STAY ON TRACK 👇🏼👇🏼. 1️⃣. STAY FOCUSSED!! One of the big things that throws us off on the weekend is lack of routine or structure. If that’s the case for you, come up with a weekend routine. TRY: meal prep, Saturday morning yoga. 2️⃣. LIMIT ALCOHOL!! A lot of people use alcohol as a way to relax and socialize on the weekends. Having a drink here and there is totally fine, but it’s super important to find other ways to relax and decompress. TRY: A long bath, morning coffee and walk with a friend. 3️⃣. HEALTHY BREAKFAST!! This is one of my favorite tips for any day of the week! A healthy breakfast starts your metabolism, helps to control your appetite all day and sets the foundation for how the rest of the day will play out. 4️⃣. MOVE MORE!! Make the most of the extra free time you have on the weekend and try to squeeze in some sort of workout or physical activity. 5️⃣. MODERATION IS KEY!! Eat and enjoy your favorite foods in moderation.
